台灣藜,又稱紅藜,是台灣原生種的藜麥植物,原住民種植與食用的歷史已有數百年之久,近來由於歐美吹起藜麥熱潮,連帶讓台灣紅藜重新受到重視。


紅藜本身含有豐富的優質蛋白質、必需胺基酸、膳食纖維和甜菜色素,外殼顏色會隨著種植氣候、採收季節而有繽紛變化,因營養價值顯著,又被譽為榖物中的紅寶石。紅藜因含有天然皂素,需先用篩網以清水沖洗,去除泡泡後再烹煮,即可減少苦澀感。

我們引進的紅藜,是與台東金峰鄉撒布優部落的原住民農友合作,以天生天養的半野放方式栽植,不需施用農藥或化肥,採收後經過乾燥、脫殼、人工篩選後包裝出貨。一般吃法可取適量紅藜與白米或糙米一起烹煮,或者蒸熟後加入沙拉、麵包、牛奶、豆漿、粥、麵,甚至製作漢堡肉排等,用途非常廣泛。

不過紅藜的鉀含量較高,若有腎臟問題的朋友需請特別留意,建議先與醫師諮詢後再食用。
